The upscale steakhouse at the Hyatt Regency near Capitol Park (a great pre-theater spot) may look clubby and old-school, with spacious tables and dark wood paneling, but the food says otherwise. Sure, it’s American comfort cooking, but with modern twists, like Sterling caviar on the lobster mac and cheese or a crust of rock salt and cracked pepper on the rosy prime rib. A signature dish is the filet mignon with optional sauces of Béarnaise, blue cheese or truffle butter. And for dessert? Individual-sized carrot cakes are a longtime favorite here (the recipe is so popular some guests ask if they can buy a full-size cake—and, if they call ahead, they can), or try the chocolate soufflé with Tahitian vanilla bean crème anglaise.
