The upscale steakhouse at the Hyatt Regency near Capitol Park (a great pre-theater spot) may look clubby and old-school, with spacious tables and dark wood paneling, but the food says otherwise: Sure, it’s American comfort cooking, but with modern twists, like Sterling caviar on the lobster mac and cheese or a crust of rock salt and cracked pepper on the rosy prime rib. A signature dish is a filet mignon with optional sauces of béarnaise, blue cheese or truffle butter. And for dessert? Individual-sized carrot cakes are a longtime favorite here (the recipe is so popular some guests ask if they can buy a full-size cake—and, if they call ahead, they can) or try the chocolate soufflé with Tahitian vanilla bean crème anglaise.
