If you didn’t know it was there, you’d likely drive right past Fujita Sushi, which opened last September and resides in an Arden-Arcade strip mall. But the humble façade of this cozy new eatery (it seats about 35 people) belies the elevated offerings inside from chef-owner Ya Her, who cut his teeth at Tokyo Steak House in Natomas and Mikuni in Elk Grove before venturing out on his own. From the intriguing Japanese tapas—like the delicate, Italian-inspired hamachi carpaccio with olives, basil, cherry tomatoes, house-made ponzu and olive oil—to Her’s take on bao, which features a bun that’s been steamed then deep fried and stuffed with proteins like teriyaki-marinated pork belly or sweet crawfish, as well as creative rolls like the Japanese Bagel, with smoked and fresh salmon, avocado, cream cheese and everything-bagel seasoning (the combo really is reminiscent of a bagel with lox and schmear), this new sushi spot is not one to be overlooked.
