The British culinary wizard—who landed a coveted spot on Saveur magazine’s “Saveur 100” list in 2014 (along with folks like Daniel Boulud)—is one of the city’s most visible champions of local sourcing, and his devotion to the region’s bounty shows in his dynamic, ever-changing menu, which features ingredients from farms like Capay Organic and Del Rio Botanical and includes staples like the juicy roasted Mary’s chicken, Skuna Bay salmon and Niman Ranch rib eye. It certainly doesn’t hurt that the food is served in one of the city’s coolest rooms, anchoring the ground floor of the 1925 tower that houses the stylish Citizen Hotel, and boasts a 19-foot ceiling, enormous industrial-chic chandeliers, and a two-story, glass-encased wine rack showcasing California’s top vintages.
