The newest player from the Paragary Restaurant Group evinces a deep devotion to California’s history in its name (which echoes the first agricultural settlement belonging to Sacramento civic father John Sutter), in its décor (look for the custom-milled table in the shape of the state with a cutout star right on Sacramento, and a quote from Sutter in glowing neon over the open kitchen) and in its food and drink, which draws on local and regional produce and meats in accordance with the farm-to-fork trend. In the case of the cocktails, make that farm-to-glass: group bar manager Brad Peters’ signature cocktails use citrus bitters made from local fruit, a mad-scientist-worthy number of elixirs and infusions, and seasonally changing tonic for the gin and tonic. As for the fare from chef de cuisine Jason Azevedo, it changes, but has ranged from bar bites like the smoked Passmore Ranch trout with creme fraiche, horseradish and golden beets to dinner items like the Llano Seco pork chop with oven roasted sweet potato gratin, braised Swiss chard and apple mostarda.
