He bases the daily changing menu on offerings from local farmers, ranch-ers and vintners, including vegetables from Full Belly and Del Rio farms, and fish from Passmore Ranch. For something sweet, look for luscious creations such as the off-the-menu Valrhona chocolate ding dong.
