“Imagine a Chipotle, but where you’ll pick a ramen and say, ‘I’ll take pork belly with that,’ ” says Scott Ostrander, explaining the concept behind Origami Asian Grill, which he owns with fellow Paragary's alum Paul diPierro (the two have also previously cheffed at the Inn at Park Winters and The Kitchen, respectively). Indeed, at this new low-key East Sacramento eatery with high-quality Far East fare, you can head to the counter to build your own bowl or sandwich. First, choose your base: rice, noodle salad, bánh mì or, our favorite, the soul-warming ramen with an optional buttery 63-degree egg. Then add protein—such as smoked tri-tip, marinated tofu or the aforementioned glazed pork belly, which is fall-apart tender—and sauce, like the charred onion glaze or fermented chile miso. Bring buddies to share a platter of perfectly crisped, maple-glazed fried chicken, and chill out on the patio, rimmed by a living wall cascading with greenery.
