The only Cuban restaurant in town, Sol Cubano brings a touch of the Caribbean sun to the less-sunny town of North Highlands. If the mural of palm trees, the sea and a map of Cuba doesn’t give you a warm tropical vibe, then the food surely will. In particular, try the outstanding roasted pork (“lechon asado”), which is fork tender and richly flavored and redolent of garlic and earthy spices from its mojo criollo marinade. It’s also addictive, and you can get it in a sandwich or as part of a larger plate with black beans and rice. And ropa vieja may mean old clothes, but it’s actually a tangy dish of shredded, long-cooked beef. Other standbys of Cuban cooking are well represented, including sides like mashed potato balls, croquettes and fried plantains. For dessert? Guava-filled pastries and a cup of strong café Cubano will set you up.
