Randall Selland takes dining out to theatrical new heights with his demonstration dinners, a four-hour gustatory tour. The ever-changing, seasonally-focused menus combine inventive flavors with familiar comforts. Such dishes as wood-grilled salmon with soft-shell shrimp, river crawdad étouffée, charred onion butter and toasted corn polenta (from the May menu) only begin to approximate Selland’s gastronomic range. The wine is every bit as serious as the food, numbering in the thousands. Reservations well in advance are a must. Dinner is prix-fixe at $135 per person; a flight of wines is an additional $75-$85.
