Echo & Rig steakhouse opens at Downtown Commons

The Vegas-based steakhouse will feature grilled fish specials along with its wide selection of red meat dishes.
Echo & Rig, the New American steakhouse at the base of the Kimpton Sawyer hotel, is set to open Monday, April 2.
The second location of chef-owner Sam Marvin's meat-focused establishment—which launched in Las Vegas in 2013 and has been described as a “protein-packed wonderland” by Food & Wine—Sacramento's Echo & Rig outpost will not feature an attached butcher shop like its Vegas sister spot, but will continue to embrace the concept of nose-to-tail dining. Its extensive lineup of meats will include cuts like bavette, rib eye cap and spencer (aka a boneless rib eye), which come with sauce choices like blue cheese, lemon chimichurri and red wine demi-glace. In addition, the menu will highlight small bites like portobello fries with herb aioli, and grilled thick-cut bacon served with barbecue sauce, while the bar will serve up craft cocktails like the Sherry Cobler, with oloroso sherry, tangerine, berries and mint. The restaurant will also serve daily breakfast beginning at 6:30 a.m., featuring such items as madeleines, scones and croissants, as well as heartier morning fare and sandwiches, a fresh-squeezed juice program, and coffee from local roaster Old Soul.
As for the design, the 7,000-square-foot space will feature a modernist vibe with wood and marble flooring, brass accents, leather chairs and carrara marble tables. "People like steakhouses, but they're not crazy about the stuffiness," Marvin says. "We're bringing a new [kind of] American steakhouse—very archival in feeling with more sophistication."
Marvin, who also founded Bottega Louie, an Italian eatery and patisserie in Los Angeles, adds that the rapidly growing dining culture here makes Sacramento the ideal city to open his second Echo & Rig. "With the Ice Blocks and [other developments in] midtown and downtown, it feels like a location that's ready to go nuts," he says. "It is exciting for me."
Echo & Rig will serve breakfast Monday through Friday for breakfast from 6-9 a.m., with lunch and dinner from 11 a.m.-11 p.m. Saturdays and Sunday brunch will run from 9 a.m.-3 p.m., with dinner from 4 p.m.-11 p.m. 500 J St. 916-545-7100. sawyerhotel.com
