Situated on the ground floor of the Kimpton Sawyer hotel at DoCo, this new contemporary steakhouse by chef Sam Marvin is a carnivore’s dream, with a menu highlighting both traditional beef cuts like rib-eye and filet mignon, and lesser-known varieties like Spencer and bavette, each of which gets served with a mushroom Rockefeller and standout garlic potato chips. But herbivores won’t be out of luck with noteworthy vegetarian items like Echo & Rig’s signature crispy portobello fries, its delicate flash-fried spinach salad with chili-lime vinaigrette, and the roasted cauliflower flavored with Fresno chilies and what Marvin describes as “brown sugar crack.” The extensive wine list, bevy of cool craft cocktails—like the Echo Gimlet, a vodka-based drink with mint, lime and peach bitters, or the house Old Fashioned with bacon-washed bourbon—and texture-rich setting (think butcher block-inspired wall art and brown leather booths) also help make this steakhouse a cut above.
