Rick Mahan’s bike-themed, pizza-focused East Sacramento outpost—designed as a more casual yet still sophisticated take on the seasonal California cooking that won the chef a loyal following at The Waterboy—remains as appealing today as the day it opened in 2009. Loyal diners of all ages gather and often spill out onto the Folsom Boulevard sidewalk for everything from the perfectly golden-crisp herbed fries with aioli to the excellent chopped salad to the OneSpeed Burger or Rick’s Pie—a pizza topped with potatoes—as well as ever-changing specials. About that pizza: Baked to blistered perfection in a mosaic-clad pizza oven—the focal point of the open kitchen and dining room—the yeasty crust falls somewhere between ultra-thin (Neapolitan style) and doughy American style. In other words, it’s designed to please pretty much anyone—much like OneSpeed itself. No wonder everyone still keeps coming back for more.
