Indeed, at this low-key East Sacramento restaurant with high-quality Far East fare, you can head to the counter to build your own bowl or sandwich. First, choose your base: rice, noodle salad, bánh mì or, our favorite, the soul-warming ramen with an optional buttery 63-degree egg. Then add protein—such as smoked tri-tip, marinated tofu or the aforementioned glazed pork belly, which is fall-apart tender—and sauce, like the charred onion glaze or fermented chile miso. Bring buddies to share a platter of perfectly crisped, maple-glazed fried chicken, and chill out on the patio, rimmed by a living wall cascading with greenery.
